It's cold outside today, and when it's cold outside there's nothing better than hot comfort food for dinner. Tonight we had the ultimate comfort food, my famous chicken pot pie. Except it isn't really famous, that just makes it sound really exciting. But my husband loves it, so thats good enough for me. Want to make one? Your husband will probably love it too! You will need:
1 bag (12 oz) frozen peas, carrots and corn
6 Tbls butter or margarine
1/3 c. all-purpose flour
1 c. chopped onion
1 c. chopped celery
1/2 tsp sea salt
1/4 tsp pepper
1 can (14 oz) chicken broth
2/3 c. milk
2-3 c. chopped cooked chicken
pastry for two-crust pie (save yourself a lot of time here and just buy refridgerated pie pastry. That's what I do when I'm in a hurry)
2. Melt butter in a large saucepan over medium heat. Stir in flour, onion, celery, salt and pepper. Stir in broth and milk. Bring to a boil, stirring constantly. Boil and stir 1 minute. Stir in chicken and peas and carrots. Remove from heat.
3. Roll out bottom pastry to fit a 9-inch square pan. Ease into pan leaving some pastry hanging over the edge. Pour chicken mixture into pastry-lined pan.
4. Roll out top pastry. Place over chicken mixture. Turn edges of pastry under and flute.
5. Bake at 425* for about 35 minutes or until golden brown.
